Cheeseburger Egg Rolls

I have seen there are some different ways to fry up egg rolls. But I have found a good result, and a safe one, is to fry them in neutral height of peanut oil. Look into my Blog about why I choose peanut oil a lot.

Crispy Beef Tacos

  • 1/2 yellow onion, diced

  • 2 teaspoon chili powder
  • 2 teaspoon cumin
  • 1 teaspoon chipotle powder
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • Cilantro for garnish
  • 8oz mozerella cheese, shredded (optional)
  • Corn Tortillas
Instructions
  1. Heat pan on med-high heat. Add diced onions in, cook until tender before adding the ground beef.
  2. Ground up the beef with a spatula then add garlic, onion, cumin, chipotle, oregano, paprika, and salt. Mix well.
  3. Add tomato paste and incorporate well into the beef, then add water. Cover and turn to heat to low.
  4. Heat comal or another pan if necessary with a neutral high of cooking oil. Place corn tortillas onto the oil along with cheese if using.
  5. Place a spoonful of meat onto the tortilla and cheese, then fold. Fry tacos on both sides till golden crispy.

Pepper Beef Stir-fry

Ingredients
  • 2lbs rib eye, sliced into thin strips (against the grain of the meat to prevent meat falling apart)
  • 2 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 large egg
  • 1 tablespoon ground ginger
  • Cooking oil for frying
  • 1/2 cup cornstarch
  • 1/2 cup all purpose flour

  • 1 yellow onion, (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 1 cup bottled terriyaki sauce (or make your own teriyaki sauce)
  • Sliced green onions for garnish
  • Sesame seeds for garnish
Instructions
  1. Place the rib-eye strips in a large bowl (tip: placing the steaks in the freezer for 20-30 min makes for an easier cut)
  2. Add soy sauce, sesame oil, egg, ground ginger, and stir to coat the meat well. Heat 1-2 inch of cooking oil (preferably peanut oil) in a med pot over med heat.
  3. Mix the flour and cornstarch in a med bowl and drop in several strips of steak.
  4. Toss them around the mixture to coat, then pick them up with tongs and shake off the excess.
  5. Drop them carefully in the heated oil and cook until the breading is crisp, 2-3 min each. Transfer the steaks onto a paper towel-lined plate or tray. Keep frying until all the beef is done.
  6. Heat a drizzle of cooking oil in a wok or large cast-iron skillet. Add garlic, onion, and bell peppers. Stir constantly and cook until tender, 4-5 min.
  7. Pour teriyaki sauce into the veggies and then add the beef. Toss around to coat everythign evenly. There shouldn't be left over sauce.
  8. Serve over white rice, noodles, or nothing at all and sprinkle green onions and sesame seeds.

Cheeseburger Egg Rolls

Ingredients
  • 2 tablespoons cooking oil
  • 1 white onion (minced)
  • 2 cloves of garlic (minced)
  • 1lb ground beef 80/20%
  • 2 tablespoons of ketchup
  • 1 tablespoon soy sauce or liquid aminos
  • 1 tablespoon worcestershire sauce
  • 6oz shredded cheddar cheese
  • 20 eggroll wrappers (I prefer Nasoya eggroll wraps)
  • A cup of water (for sealing)
  • Frying oil (I prefer peanut oil see blog for more in depth reason as to why)

Recipe for dipping sauce

Instructions
  1. Heat oil in large heavy skillet over medium heat. Add the onion and garlic; cook until the onions are soft and translucent.
  2. Turn the heat up to medium-high and add the ground beef; break the meat into crumbles as it cooks. When the meat is no longer pink, stir in the ketchup, soy sauce and Worcestershire sauce. Cook together for another minute. Remove from the burner and stir in the shredded cheese.
  3. Place an egg roll wrapper on a clean work surface with one corner facing you (like a diamond). Spoon 3 level tbsp of the meat mixture onto the bottom half of the wrapper. Fold the bottom point up and over the filling. Fold the right point over toward the left; fold the left point over toward the right to create what now looks like an envelope. Brush some egg wash (or water) on the exposed area above the bundle. Roll the bundle tightly toward the top point to seal it up. Set aside and repeat with the remaining filling.
  4. Pan fry directions: Heat about 1/2-inch of oil in skillet over medium heat. When hot, add a few egg rolls to the pan without overcrowding. Cook for 2 to 3 minutes on each side. Transfer to paper towels to drain.
