ZILLA'S RECIPE BOOK

Welcome to pastas!

A curated page of different pasta dishes. Some include meat others do not. I am very big on pasta and pasta based entrees. Again these are not my original recipes, a lot of these come from the cook books I have or are renditions of them. Check out the recipe book list I have back on main page

Pasta Fagioli

Ingredients
  • 1 1/2 cup cooking oil
  • 1 yellow onion (sliced)
  • 2 carrots (peeled and sliced)
  • 3 celery stalks (thinly sliced)
  • 3 tablespoons oregano
  • 1tablespoon thyme
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup tomato paste
  • 6 garlic cloves (minced)
  • 6 cups chicken broth
  • 1 15oz fire roasted tomatoes
  • 2 15oz canned white beans (cannellini or great northern) drained and rinsed
  • 1 1/2 cup uncooked ditalini
  • 3 cups roughly chopped kale (stems removed)
  • Grated zest and juice of 1 lemon
  • 2 roma tomatoes (seeded and diced)
  • Grated parmesan cheese for serving
Instructions
  1. Heat the cooking oil in a large dutch oven over medium heat. Add the onion, carrots, celery, oregano, thyme, and pepper flakes.
  2. Add a pinch of salt and pepper. Cook, stirring occasionally, until the vegetables have softened, about 7 minutes.
  3. Add the tomato paste and garlic, cook for another 2 minutes, stirring constantly.
  4. Pour the chicken broth, add the canned tomatoes, and stir to combine, increase the heat to med-high heat and bring it to a boil.
  5. Place half of the beans in a med bowl and mash them with a fork until they're mostly broken up into smaller pieces and have formed a paste.
  6. Add the mashed beans to the pot, along with the whole beans and pasta.
  7. Simmer, stirring often to keep the pasta from sticking together, until the flavors are developed, 10-12 min
  8. Pile in the kale (dont worry it will shrink down as it cooks), stir it in. Cook until the pasta is tender and the kale is wilted, another 5 min.
  9. Add the lemon zest, juice, and the roma tomatoes. Stir and taste, adjusting salt and pepper as needed.
  10. Dish it up and sprinkle parmesan cheese!
